General Tso's Chicken Soup

Ingredients
  

For the Chicken:
  • Toasted sesame oil
  • Egg white helps tenderize and lightly coat the chicken
  • Low-sodium soy sauce
  • Cornstarch
  • Boneless chicken thighs
  • Vegetable oil
For the Soup Base:
  • Onion diced
  • Red bell pepper diced
  • Broccoli florets + chopped stems
  • Fresh garlic
  • Chicken broth homemade if possible!
  • Soy sauce
  • Hoisin sauce
  • Fresh ginger
  • Sambal oelek or chili garlic sauce adjust to taste
  • Cooked rice
  • Scallions for garnish
  • Pro Tip: Use brown rice for extra fiber and texture!

Method
 

Step-by-Step
  1. Marinate the chicken: Whisk sesame oil, egg white, soy sauce, and cornstarch, then toss the chicken until well-coated. Let rest.
  2. Cook the chicken: In a shallow pool of oil, cook pieces until golden. Remove and set aside.
  3. Saute veggies: Add onion, bell pepper, broccoli stems, and garlic to the pot. Cook until soft.
  4. Build the broth: Stir in some broth with soy sauce, hoisin, ginger, cornstarch, and chili paste. Simmer until glossy and aromatic.
  5. Finish the soup: Add remaining broth, broccoli florets, and cook gently. Stir in rice, then add back chicken pieces. Top with scallions.
