I’ve been baking for years and love making different food from scratch, but for some reason I never considered making crackers at home: until this week. Like so many other things I assumed they would take a long time and not be worth it. Turns out, I was completely wrong. Homemade crackers are incredibly simple, fast, and honestly way more delicious and healthy than anything from the store- I am totally hooked and now want to try every variation possible.
These crackers bake up thin and crunchy: the perfect partner for cheese boards, dips, and snack plates. You can keep the flavor classic or have fun experimenting with your own seasonings (I’ve shared several of my favorite flavor variations but you can really experiment with any of your favorite flavors).

Base Ingredients
This recipe starts with just four pantry staples: all-purpose flour, salt, water, and olive oil. This makes it fast to mix together – I just used a bowl and wooden spoon and it doesn’t take any long mixing or kneading.
The salt level is intentionally mild to leave room for toppings and dips, but feel free to increase it up if you prefer a saltier cracker. I usually add a little extra salt to the top of the cracker so like to keep the dough less salty.


Flavor Ideas
One of the best parts of homemade crackers is how easily you can customize them. Stick mostly to dry ingredients so the dough stays easy to roll out, but feel free to experiment. I started looking at the different combinations in the grocery store to get a sense of what other flavors people like.
Here are a few simple combinations to get you started:
- Garlic & Thyme: 1 tsp garlic powder + 2 tsp dried thyme
- Honey Chipotle: 1 tbsp honey + 2 tsp ground chipotle
- Onion & Black Pepper: 1 tsp onion powder + 1/2 tsp black pepper
- Rosemary Sea Salt: 2 tsp dried rosemary (crushed) + 1/2 tsp flaky sea salt
- Smoked Paprika & Cumin: 1 tsp smoked paprika + 1/2 tsp ground cumin
- Lemon Herb: 1 tsp lemon zest + 2 tsp dried parsley
- Parmesan Herb: 2 tbsp finely grated Parmesan* + 1 tsp Italian seasoning
- Everything Seasoning: 1 tbsp everything bagel blend
Mixing the Dough
Whisk the flour, salt, and any dry seasonings in a large mixing bowl. Add the water, olive oil, and any liquid additions (like honey), then stir with a wooden spoon or spatula until a rough dough forms. If a bit of flour remains at the bottom of the bowl you can use your hands just to get it together. You can go ahead and use the dough right away – I let mine sit for about 10 minutes while I did other things and it was very easy to roll out.


Rolling and Cutting
Divide the dough into two pieces to make it easier to work. Working with one portion at a time, roll it out on parchment paper. Aim for a very thin sheet: thinner than 1/8 inch, and try to keep the thickness as even as possible. This first batch I made I didn’t get thin enough and they were good just not quite thin and crunchy If some areas are thicker, those crackers will bake up softer.
Use a sharp knife or a pizza cutter to slice the dough into whatever shape you like: squares, rectangles, diamonds, or rustic uneven pieces. Smaller or pointier shapes will brown a bit faster.

Baking the Crackers
Slide the parchment onto a baking sheet and bake at 400°F for 10-15minutes, or until the edges start turning golden brown. Keep an eye on them the baking time varies depending on size and thickness and the last crisping up bit happens quickly. Let the crackers cool completely on the pan; they’ll crisp even more as they cool.
Serve them with hummus, cheese, dips, or enjoy them by the handful.

How to Store Homemade Crackers
Once the crackers have cooled fully, store them in an airtight container at room temperature. Here are a few tips to keep them crunchy and fresh:
- Use a truly airtight container or jar so no moisture sneaks in.
- Add a small packet of food-safe desiccant (optional but helpful, especially in humid climates).
- If they soften over time, re-crisp them by baking for 3–5 minutes at 300°F.
- Properly stored, homemade crackers stay fresh for 5–7 days, though they rarely last that long!

- Cut into your desired shapes. Repeat with remaining dough.
- Transfer to a baking sheet and bake for 10–15 minutes, until lightly browned.
- Cool completely and store in an airtight container.
