Ingredients
US Measurements:
- 1 cup cold water
- ¾ cup yellow dry mustard powder (see notes below)
- ¾ teaspoon coarse sea salt or kosher salt
- ½ teaspoon ground turmeric
- 1 teaspoon garlic purée (or ⅛ teaspoon garlic powder)
- â…› teaspoon paprika
- ½ cup white distilled vinegar
Metric Measurements:
- 240 ml cold water
- 96 g yellow dry mustard powder
- 3.7 g coarse sea salt or kosher salt
- 1.2 g ground turmeric
- 4.8 g garlic purée (or 0.5 g garlic powder)
- 0.3 g paprika
- 120 ml white distilled vinegar
Instructions
- Mix the Ingredients
In a small nonreactive saucepan, whisk together the water, mustard powder, salt, turmeric, garlic purée (or garlic powder), and paprika until smooth. - Cook the Mustard Base
Place the saucepan over medium-low to low heat. Cook the mixture, stirring frequently, until it thickens into a paste, about 30 to 45 minutes. (Tip: Ensure your kitchen is well-ventilated, as mustard fumes can be strong!) - Add Vinegar & Final Cook
Whisk in the white distilled vinegar and continue cooking until the mustard reaches your desired consistency, usually 7 to 15 minutes. - Cool & Store
Remove the mustard from heat and let it cool to room temperature. Transfer to an airtight container and refrigerate. - Enjoy!
Your homemade mustard is ready to use! Note that it will taste quite strong at first but will mellow after a few days in the fridge. Store for up to 3 months.


Notes
You can also mix different mustard powders to achieve your preferred heat level.
Choosing Mustard Powder:
Once you start making your own mustard, it’s fun to experiment with different types of mustard powder and recipes.
For a classic American-style mustard, use a mild yellow mustard powder like McCormick’s.
For a spicier kick, try Colman’s mustard powder (a mix of white and brown mustard seeds).
